docs: note console.table quoting in skill list output

Closes #43 (remaining half).

Issue #43 reported two things about the list output documented in
skills/projex/SKILL.md §3:

1. The table has a leading (index) column not in the documented column
   list.
2. Cell values are single-quoted in the real output, which the column
   description didn't mention.

Point 1 was already fixed on the skill branch in a181262 (PR #40, merged) —
the doc line now reads (index) | ID | Type | Status | Featured (★) | Name.
Point 2 was not. This PR adds the one-line note: the table is rendered via
Node's console.table, which auto-prepends the (index) column and
single-quotes string cell values, so parsers must strip the quotes.

Verified against live projex list output (2-row config, manual + npm
entries) — the rendered table matches the documented shape exactly.
