docs: remove stale pdf.yml row from LAUNCH.md launch-readiness gate - #524

pdf.yml was removed by merged PR #295 and its tracking issue #123 is closed. The launch-readiness gate table in LAUNCH.md still listed it as a pipeline that must be green before W-0, pointing at a workflow and tracking issue that no longer exist. pdf.ymlwas removed by merged PR #295 ("ci: remove broken pdf.ymlworkflow"), and its tracking issue #123 is CLOSED. The gate table
still listed it as one of the pipelines that must be green for 2
consecutive scheduled runs before the W-0 launch, pointing a
maintainer at a workflow and tracking issue that no longer exist.
