fix Coolify deploy: MinIO images from quay.io - #254

Docker Hub removed the public minio/minio and minio/mc repositories, which caused Coolify deploys to fail with "pull access denied". Point both compose files at the still-public quay.io mirrors. Co-authored-by: Domenik Töfflinger <dmnktoe@users.noreply.github.com>

Problem
Coolify deployments fail while pulling compose images:
Docker Hub no longer hosts the public
minio/mcandminio/miniorepositories (API returns 404). The same images are still available on Quay.Change
docker-compose.yml:minio/minio→quay.io/minio/minio,minio/mc→quay.io/minio/mcdocker-compose.dev.yml: same updatesAfter merge, redeploy on Coolify; the pull step should succeed again.
