Removes the vulnerable tinypool dependency behind Dependabot alerts #533 and #534 by upgrading Vitest and its V8 coverage provider to 4.1.11.

Pins development and E2E tooling to Node.js 24.21.0, updates @types/node to v24, and runs unit-test CI on Node.js 20.19, 22, and 24. Removes the coverage option dropped in Vitest v4 and updates affected mock resets and types.

This drops Node 18 support. Which I think is generally fine, but we should cut a new major once this is merged. Not a big deal in the wizard. All as discussed yesterday :)
