gradle plugin to 9.2.1
compileSdk to 37
minSdkVersion to 26
remove targetSdkVersion

Update iOS:

s.ios.deployment_target to 16
platforms: .iOS to 16

Also, pod linting is failing for a reason that is fixed in this PR, so I don't know what the heck that's about.

what fails is build-example-app-ios because it has iOS 15 deployment target and this changes the plugin to 16, so it makes it incompatible with current example app, we should update example apps to Capacitor 9 first, and for that would be good to have migrate command updated
