feat: Add ExecScriptAsync overload that accepts an encoding - #1805
Adds an ExecScriptAsync(string scriptContent, Encoding encoding, CancellationToken ct = default) overload to every module that executes scripts: Cassandra, ClickHouse, CockroachDb, Db2, FirebirdSql, MariaDb, MongoDb, MongoDbAtlasLocal, MsSql, MySql, Oracle, PostgreSql and Redis. The overload uses the given encoding when it writes the script file into the container.
The existing ExecScriptAsync(string, CancellationToken) keeps its signature and calls the new overload with Encoding.Default. Its XML docs now say which encoding it uses. In MySql and MariaDb, the <see cref="ExecScriptAsync" /> doc reference became ambiguous, so it now points to the (string, CancellationToken) overload.
For MsSql, sqlcmd reads the script as UTF-8 unless told otherwise, so ExecScriptAsync now passes the encoding's code page with -f i:<code page> (input only, so the output read into ExecResult is unchanged). On .NET Core and later the existing overload passes 65001, which matches what sqlcmd already assumed. On .NET Framework it passes the ANSI code page, which fixes the MsSql corruption reported in the issue. The legacy v17 sqlcmd in images from before mid-2022 ignores -f and always reads UTF-8.
Why is it important?
The script content is always encoded with Encoding.Default. On .NET Framework that is the system's ANSI code page, so characters outside that code page are corrupted before the database ever reads the script. The issue reports this for MySql, and a comment on it reports the same for MsSql on .NET Framework 4.8. Callers can now pick the encoding their database client expects.
dotnet test tests/Testcontainers.MySql.Tests
dotnet test tests/Testcontainers.MsSql.Tests
The new ExecScriptWithEncodingReturnsSuccessful tests write the script as Latin-1 and read the inserted value back through ADO.NET. Encoding.Default is already UTF-8 on .NET 10, so a UTF-8 test would pass with or without this change; using Latin-1 makes the tests depend on the new parameter. The MySql test declares SET NAMES latin1; if the overload ignores the encoding, it reads back Grüße instead of Grüße. The MsSql test relies on the -f flag; without it, it reads back Gre.
Locally (macOS, .NET 10), the MySql and MsSql suites pass in all four configurations each, and the existing ExecScript tests for MariaDb, PostgreSql, Redis and MongoDb pass. I didn't run the Cassandra, ClickHouse, CockroachDb, Db2, FirebirdSql, MongoDbAtlasLocal or Oracle tests locally. Their change is identical, and CI covers them.
Follow-ups
The default stays Encoding.Default to avoid a behavior change. Changing it to UTF-8 would fix .NET Framework users with no code changes on their side. I'm happy to do that here or in a separate PR if you prefer.
A few other places still write content with Encoding.Default, such as MongoDbAtlasLocal init scripts added through WithResourceMapping. I left them out of scope.

New Features
Database containers now accept an explicit text encoding when executing scripts. Existing overloads remain available and continue to use the system’s default encoding.
ExecScriptAsync now accepts an explicit Encoding across database containers. Existing overloads delegate using Encoding.Default. MsSqlContainer also passes the selected code page to sqlcmd. MySQL and SQL Server tests verify Latin-1 script execution and retrieval of a non-ASCII value.

Summary
Encoding-aware execution and validation src/Testcontainers.*/...Container.cs, tests/Testcontainers.MySql.Tests/*, tests/Testcontainers.MsSql.Tests/*
Database containers use the supplied encoding when writing script content. Existing overloads retain the default encoding. MsSqlContainer passes the encoding code page to sqlcmd. MySQL and SQL Server tests verify Latin-1 script execution and retrieval of Grüße.
The new encoding overload can fail or corrupt non-ASCII scripts across several database modules; client charset handling should be fixed before merging.

Explanation
Issue #1201 requires an encoding parameter for script execution. The PR adds ExecScriptAsync(string, Encoding, CancellationToken) to the listed database modules. Each overload uses the supplied encoding to write the script. The existing overload delegates with Encoding.Default. The MySql and MsSql tests verify Latin-1 script handling. The MsSql sqlcmd -f i:<code page> change supports correct input decoding.

Explanation
The changes remain within issue #1201. The overloads implement the requested encoding support. The sqlcmd input code-page option, XML documentation, overload reference fixes, and integration tests support that implementation. No unrelated change is identified.

Pass the matching Firebird charset to isql, or reject unsupported encodings.
The overload writes bytes with the supplied Encoding, but isql runs without -charset. Firebird therefore uses NONE, which does not perform the required character-set conversion. For example, Encoding.Latin1 requires -charset ISO8859_1, and Encoding.UTF8 requires -charset UTF8. Otherwise, non-ASCII SQL values can be rejected or stored incorrectly.

Set PostgreSQL’s client encoding before --file.
This public overload writes the file with the supplied encoding, but psql keeps its current client encoding when it reads the file. A reachable Latin-1 call can therefore fail on non-ASCII bytes or convert them incorrectly.
Add a --command before --file that executes SET client_encoding TO ... using the canonical PostgreSQL name for the supplied Encoding. Do not pass Encoding.WebName blindly: .NET returns IANA names such as iso-8859-1, while PostgreSQL names that encoding LATIN1 and aliases it as ISO88591. Unsupported .NET encodings should be rejected or mapped explicitly.

Reject non-UTF-8 encodings for ClickHouse scripts.
clickhouse-client --queries-file reads the copied file as raw bytes. It does not receive the supplied Encoding. Therefore, a script containing é encoded with Encoding.Latin1 can store byte 0xE9 instead of the UTF-8 bytes 0xC3 0xA9. ClickHouse String preserves arbitrary bytes, so this can silently store the wrong text bytes.
Reject unsupported encodings before copying the script.

src/Testcontainers.MariaDb/MariaDbContainer.cs:55-63 🗄️ Data Integrity & Integration | 🟡 Minor | ⚡ Quick win
Configure the MariaDB client character set for the script encoding.
encoding.GetBytes(scriptContent) changes the file bytes, but mariadb --execute=source ... still uses its default client character set. For the mariadb:10.10.7 image, that default is latin1. A call with Encoding.UTF8 can therefore send UTF-8 bytes as Latin-1, which can corrupt or reject non-ASCII SQL.
Pass --default-character-set=<MariaDB charset mapped from encoding> to mariadb (for example, utf8mb4 for UTF-8 and latin1 for Latin-1). Do not pass Encoding.WebName without mapping it to a MariaDB charset name.

Match the mysql client character set to encoding.
encoding.GetBytes(scriptContent) changes the file bytes, but the mysql command still uses its default client character set. A Latin-1 script with non-ASCII bytes can therefore be interpreted incorrectly.
The test starts with SET NAMES latin1, which is early enough to mask the defect. Pass --default-character-set=latin1 for Encoding.Latin1 at this execution boundary, with equivalent MySQL charset names for other supported encodings.
